Yellow Starthistle is a highly invasive weed in California, covering nearly 15 million acres.
In its early life stage, it makes excellent cattle feed, but when it becomes mature, it's spiny flowers can injure cattle eyes, and is toxic to horses.
Its only redeeming quality is that it produces some of the purest honey available.
This year with the late spring rains, our local beekeeper was able to place hives in key areas to capture this special product
It was the only plant flowering, so we are confident in the purity of this product
It has a very distinctive flavor compared to other honeys
